Hello there!

I know its been a while since I updated the site (sorry about that) but now I am back in full swing! Today I organized the menus a bit and added a new section, Recipes (which can be found under the "Other" menu). I am hoping to add a few recipes to this section every week, and as always I welcome articles from you, the reader, that you would like to share with the rest of the junior chefs out there!

Now a little about the recipes...

 

These recipes are designed to be as affordable as possible and cooked in the typical dorm room with adaptations to different equipment available (which may be due to money constraints or college residence rules). While these recipes are not meant to be innovative or original (although we try), they are meant more to encourage you to try cooking healthier (and cheaper) while in dorm and to try creating your own versions of these recipes (for instance you can change the Tex Mex chicken recipe into an Italian or Indian flavoured dish by adding different spices and flavourings to the chicken before cooking). These recipes are more guidelines than strict instructions, feel free to substitute turkey for chicken, or coriander for cumin. Experimenting is a great way to learn more about flavours and how to use them; you may have some great successes and you may have some not so great successes, its all part of the learning process (which is why your in school to begin with, isn't it?).

 

 

Now these recipes dont just apply to dorms, they can apply to appartment buildings, hotels, staff housing or anywhere where they might not let you have a regular tove and oven. Im sure with a little imagination and creatiovity you can use these recipes in almost any situation and create many variations on these simple recipes.

TREVOR RITCHIE WINS THE WACS
HANS BUESCHKENS JUNIOR CHEFS CHALLENGE

 
SANTIAGO, CHILE: The Canadian Culinary Federation (CCFCC) is proud and delighted to announce that Junior Chef Trevor Ritchie, of Niagara, Ontario, under the guidance of his Executive Chef and mentor James Olberg of Queens Landing Hotel, finished in first place with a gold medal and the Memorial Trophy at the WACS Hans Bueschkens Junior Culinary Challenge, which took place at the WACS Congress in Santiago, Chile on Wednesday January 27, 2010.
 

Trevor, winner of the 2009 CCFCC National Junior Culinary Challenge at the CCFCC National Conference in Kelowna last May, represented Canada and competed against Junior Chefs from other WACS member countries. This competition was first held in Japan in 1992 and is named after the late renowned Canadian chef Hans Bueschkens, who served two consecutive terms as WACS President from 1980 to 1988, and who played a key role in the creation of programs that would inte rest junior chefs.


Each Junior Chef had three and a half hours to prepare and present a well-balanced three-course menu for 8 in this “mystery basket” style competition for a panel of international judges including Christophe Luzeux, Executive Chef of the Trade Centre Limited in Halifax, Nova Scotia.
I was extremely proud and pleased to be a part of this event and of Trevor’s tremendous accomplishment”, said Luzeux. CCFCC National President Judson Simpson also congratulated Trevor for winning this high level competition and for being such an outstanding role model to other Canadian junior chefs.
